Preparation: Ruby Ganache
- Heat the puree to a full boil
- Add over chocolate and blend till combined
- Set and pipe
- Garnish with fresh berries
Cheesecake Filling
Ingredients: Cheesecake Filling

2.0 lbMedium Fat Cream Cheese

8.5 ozcream
Preparation: Cheesecake Filling
- Cream the creamcheese & Sugar in a mixer until smooth
- Melt chocolate & add to creamcheese mixture slowly & gradually until combined
- Separataly Whip up the Cream until soft peaks and fold into Chocolate cream cheese base
- In a springform pan place chocolate sponge and pour ontop cheesecake mix
- Set in frigde and once firm set ruby ganache layer ontop
- Serve
