We are thrilled to welcome the internationally renowned pastry chef and Chocolatier Lawrence Bobo to our academy!
Lawrence has forged a great name for himself in the area of chocolate showpieces. His unique style sees Lawrence create fantastic showpieces with minimal use of moulds and equipment making this accessible to all. His unique style breaks away from the traditional showpiece and allows you the freedom to be creative when designing your own bespoke showpieces.
In this advanced course, you will explore the world of building showpieces that is ideal for chefs with a desire to compete or take their artistic skills to the next level. Chef Lawrence will share his knowledge and craftsmanship with a beautiful showpiece design showcasing some of his signature techniques. Chef Lawrence will demonstrate the application and then students will replicate and construct their own sculpture based on Chef Lawrence's display and theme. This class will also be immersed in chocolate through a variety of confections, carving, shaping, casting & building a showpiece to showcase your bonbons.

Lawrence’s chocolate showpiece master class will teach you a whole host of skills and techniques from scratch including:
- How to design and balance a completion showpiece
 - Casting the structural base elements of the showpiece
 - Sculpting and modeling chocolate
 - Explanation of how chocolate and cocoa butters work in different environments and application
 - Spraying cocoa butter colours to create different effects
 - Polishing and finishing the different elements of the show piece to achieve a completion standard.
 Most importantly after spending all those hours creating the show piece, he will show you how you transport it to the competition or to a customer.
The course includes:
- All course materials and recipe booklet
 - Lunch and Refreshments
 - An Apron
 - A signed Chocolate Academy certificate
 - Note: Accommodation not included
 - What to wear: You will be in a professional working environment so will need to wear comfortable working clothes (long trousers) and covered, closed toe shoes.
 - Please note: Jewellery (including watches) and nail varnish to be removed for the duration of the course.
 - Duration - day 1 & 2: 9 am - 5pm, day 3 9am - 4pm
