Dried fruit and cocoa nib granola bars

To capture the fruity flavours and pulpy feeling of fresh cocoa pulp in a snack size delight, I decided to bring together the vibrant sensation of selected fruit pieces, the crunch of roasted nuts and the comforting combination of cocoa nibs and Callebaut® dark chocolate. Customers will literally be eating out of the palm of your hand.

  • 1.1 lb
    Prepared granola
  • 4.0 oz
    Whole skinned roasted almonds
  • 4.0 oz
    Roasted whole pistachios
  • 2.0 oz
    Roasted cashew pieces
  • 0.9 oz
    Freeze-dried pineapple pieces
  • 1.1 oz
    Freeze-dried banana pieces
  • 0.9 oz
    Freeze-dried passion fruit pieces
  • 1.3 oz
    Freeze-dried raspberry pieces
  • 0.9 oz
    Freeze-dried strawberry pieces
  • 2.5 oz
    Nibs-s502

Preparation: Dried fruit and cocoa nib granola bars

Mix.

Ingredients: Dried fruit and cocoa nib granola bars

  • 4.0 oz
    Butter
  • 8.0 oz
    Marshmallows

Preparation: Dried fruit and cocoa nib granola bars

Melt.
Pour over previous mixture.

Pour into a Flexipan® mould of 10 cm tall. Bake at 160°C for 7 minutes.
Remove from oven and leave to cool. Cut into bars.
