    icing sugar
  • Q.S.
    fresh lemon juice

Preparation: Mango puree

Flavour mango puree with icing sugar and lemon juice to the taste.

  • 0.1 oz
    Sosa ultratex

Preparation: Mango puree

Add and pipe on bottom of glasses.

Melt.

  • 6.3 oz
    lychee puree
  • 8.5 oz
    3.6% full cream milk

Liquidise all ingredients together.

Mix together with a hand blender.

Mango foam

  • 3.5 oz
    crème anglaise
  • 1.1 oz
    mango puree

Preparation: Mango foam

Mix together with bar blender. Skim foam off top and place on top
of drink.

White chocolate stick

Ingredients: White chocolate stick

Preparation: White chocolate stick

Pipe into strips.

    roasted desiccated coconut
  • Q.S.
    Dried mango pieces
  • Q.S.
    grated lime zest

Preparation: White chocolate stick

Sprinkle on top of strips. Allow to set for 2 hours at 12°C.
