144 gWhole eggs at 45°c

127 gClarified butter at 50 °c

150 gCandied orange marmalade

137 gSponge cake flour

8 gBaking powder

115 gGranulated sugar

1 gSalt

6 gOrange soak

14 gTrimoline
Preparation: Chocolate and Orange Cake
- Place all dry ingredients in a mixer and blend
- Add the eggs while the mixer is running
- Incorporate the clarified butter
- Add the trimoline
- Add the candied orange marmalade
- Incorporate the grated cocoa mass
- Fill flexible mini-loaf molds halfway.
- Pipe a line of soft butter on top.
- Bake at 150°C for 10 minutes.
- Flash-freeze to stop the cooking process.
- Lightly soak with orange syrup once cooled.
Orange Soak

Preparation: Orange Soak
- Boil the water with the sugar
- Remove from heat and let cool slightly
- Add orange juice
- Use it to soak the cakes
- Freeze afterwards for easy unmolding
- Dip in the glaze while still frozen
Dark Chocolate Ganache Filling and Glaze
Ingredients: Dark Chocolate Ganache Filling and Glaze

204 gHeavy cream
Preparation: Dark Chocolate Ganache Filling and Glaze
- Boil the milk and glucose syrup
- Pour over the chocolate and blend with an immersion blender until a ganache forms
- Add the cold cream and blend again
- Pour into a shallow tray, cover with plastic wrap (touching the surface), and allow to crystallize completely before use
- To glaze, gently warm the ganache to ~35°C and apply to the cakes

- Cover the glazed cakes with grated chocolate
- Place a slice of candied orange on top
- Add a small amount of ganache and use it to secure the decorative chocolate leaf

Thanks for your patience. It looks like gremlins had been nibbling on the recipe! It's been updated now. Note that DCP-22EXBRU is Callebaut Extra Brute Cocoa Powder.

I'm also wandering where is the missing ingredients on the list? Can we get them? Otherwise it's a pointless recipe....

Dear Izabella, sorry for the delay in answering. The missing ingredient was Callebaut Callebaut Selection - Botanical Extra Brute Powder - 1kg. It has now been added to the recipe. Best regards,
