Brown Butter Cookie

Preparation: Brown Butter Cookie

  1. Brown the butter and set it aside to cool
  2. Once cooled, mix the brown butter, sugar, and salt
  3. Alternate the eggs and sifted dry ingredients
  4. Fold in the Van Leer Ultimate Milk Chunks
  5. Let rest for a minimum of 4 hours
  6. Scoop with a 2 ounce ice cream scoop
  7. Roll in brown sugar and place on a baking tray
  8. Bake at 170°C (338°F) for 12 minutes
  9. Place the garnish on top

Spiced Pecans

Ingredients: Spiced Pecans

  • 4.9 oz
    pecan pieces
  • 1.1 oz
    egg whites
  • 0.4 oz
    sugar
  • 7.7 gr
    ground cinnamon
  • 10.8 gr
    Sea salt

Preparation: Spiced Pecans

  1. Gently whisk the egg whites with the sugar
  2. Fold in the pecans, cinnamon, and fleur de sel
  3. Bake at 160°C (320°F) for 1 minute
