Beat together with paddle attachments.

    baking powder

Add.

    butter
  • Q.S.
    candied chestnuts

Cut the chestnuts into pieces, mix and add to the previous.

Spread on a baking tray in a layer of 1 cm thickness. Bake at 200°C.

Chestnut crème

Add and mix.

    Whisky

Mix in. 

Chocolate bavarois

  • 150g
    milk
  • 1
    vanilla bean
  • 150g
    cream
  • 4
    egg yolks
  • 70g
    invert sugar

Make an anglaise. 

  • 60g
    Arriba

Melt and mix in the anglaise

  • 2g
    gelatin

Add.

  • 12g
    whipped cream

Add at 30°.
