Chocking donut

This chocking doughnut recipe, or donut if you will, yields a mouth-wateringly fresh and fluffy piece of halo-shaped dough confectionery that has millions of fans around the world. No matter if they’re a chocolate glaze, frosting or icing kind of person, your customers will simply love the layer of ready-to-use Creme dell'Artigiano Fondente on top: decorated with a handful of dark ChocRocks™, it adds a bit of dark chocolate flavour to the sweet taste of the doughnut, and gives the pillowy piece of goodness some additional crunch. Great to be enjoyed on its own, or served with a fresh cup of coffee or milk.

  • 530g
    bread flour
  • 65g
    sugar
  • 8g
    salt
  • 20g
    yeast
  • 199g
    whole egg(s)
  • 100g
    water
  • 1g
    ground nutmeg
  • 1
    grated vanilla bean

Knead together at low speed for 5 minutes.

Gradually add to previous mixture and knead for 20 minutes. Cover and leave to rise until doubled in size. Knead by hand and leave to rest in refrigerator overnight.
Spread out until 0.8 mm or 1 cm thick and cut into doughnut shapes with doughnut cutter. Leave to rise at room temperature until doubled in size.
Fry at 180°C. Glaze with Creme dell’Artigiano Fondente and leave to cool. Sprinkle with ChocRocks™.
