Looking for inspiration and curious how top chocolatiers and pastry chefs craft their stunning, colorful pieces?
Join us for this 3-day advanced hands-on course designed for professional chefs. Chef Philippe will guide you through mastering crystallization, flavor pairing, and texture layering—all with a focus on efficiency and creativity.
 

You’ll learn:

  • Double and single-mold techniques
  • Enrobing with machinery
  • Spray decoration with colored cocoa butter
  • Creating fat- and water-based fillings with insights on shelf life and texture

This is a full-participation Masterclass where you’ll explore how to achieve a high shine, professional finish, and optimize the interior experience of your chocolates.


Who should attend:
Professionals who have completed Fundamentals 1.0 or have a solid grasp of basic tempering techniques.

What the course will cover: 

Moulded chocolates incorporating :

  • Decoration techniques with coloured cocoa butters and creative powders
  • Origin chocolate based ganaches, caramels, fruit gels and textures
  • Layered cut ganaches - finished by hand dipping and machine enrobing
  • Elegant snacking bars
  • Ideal working and storage environments
  • Shelf life considerations.

The course includes:

  • All course materials and recipe booklet
  • Lunch and Refreshments
  • An Apron
  • A signed Chocolate Academy certificate

Note: Accommodation not included

What to wear: You will be in a professional working environment so will need to wear comfortable working clothes (long trousers) and covered, closed toe shoes.

Please note: Jewellery (including watches) and nail varnish to be removed for the duration of the course.

Workshop hours (approximatively): 09:00 am-12.00, 01.00 pm-5:00 pm
