Preparation: Miso Filling

Mix the miso together with the Glucose Syrup 

Set aside.

Smoked Ghana Ganache

Ingredients: Smoked Ghana Ganache

  • 400 g
    whipping cream
  • 200 g
    water
  • 80 g
    invert sugar
  • 70 g
    glucose DE 44
  • 110 g
    dextrose
  • 3 g
    salt

Preparation: Smoked Ghana Ganache

Dissolve the sugar and salt in the cream and water.

Pour the sugar-liquid mix over the chocolates and cocoa butter.
