Gently warm the Cara Crakine and pipe approximately 4g into each truffle shell.

Close the truffle shell with tempered milk chocolate.

Once you've rolled your truffles in the tempered milk chocolate, place directly into the cocoa powders of your choice.

Roll the truffles in the cocoa powders so that they are completely covered.

Leave to rest for 30 minutes before tapping off any excess cocoa powder and packing as desired.
