Coffee Marzipan

Preparation: Coffee Marzipan

  1. Mix both ingredients shortly together and roll out at 5 mm thickness using a frame.
  2. Poor a very thin layer of cristallized chcolate on a guitar sheet and put directly the
  3. marzipan on top . push well to glue it together

Caramel ganache with Tonka

Ingredients: Caramel ganache with Tonka

Preparation: Caramel ganache with Tonka

  1. Boil the cream, sugars together. Strain and poor on top ot the chocolate.
  2. emulsify with the gold chocolate and cocoa butter using emmersion blender
  3. crystallize the ganache at 30C and frame on top of the marzipan.
  4. Cool to crystallize and cut out with round cutter.
  5. Freeze for a short time and and spray with colored cocoa butter.
  6. Decorate with a thin white chocolate disc, representing a "just before midnight clock".
