Coffee Marzipan
Ingredients: Coffee Marzipan

0.7 ozsoluble coffee
Preparation: Coffee Marzipan
- Mix both ingredients shortly together and roll out at 5 mm thickness using a frame.
- Poor a very thin layer of cristallized chcolate on a guitar sheet and put directly the
- marzipan on top . push well to glue it together

Caramel ganache with Tonka
Ingredients: Caramel ganache with Tonka

0.2 ozgrated Tonka

1.2 ozdextrose

0.9 ozGlycerol

0.9 ozglucose

1.1 ozsorbitol
Preparation: Caramel ganache with Tonka
- Boil the cream, sugars together. Strain and poor on top ot the chocolate.
- emulsify with the gold chocolate and cocoa butter using emmersion blender
- crystallize the ganache at 30C and frame on top of the marzipan.
- Cool to crystallize and cut out with round cutter.
- Freeze for a short time and and spray with colored cocoa butter.
- Decorate with a thin white chocolate disc, representing a "just before midnight clock".
