Preparation: Chocolate-Covered Honeycomb

  1. Melt Extra Bitter Guayaquil Dark chocolate and mix in honeycomb pieces.
  2. Place the Callebaut Gold callets in the panning machine.
  3. Progressively add Extra Bitter Guayaquil Dark chocolate/honeycomb mixture into panning machine.
  4. Shine dragées in the panning machine.
  5. Splash some colored cocoa butter on the finished dragées.
