Rheology
What you will learn
Gain a solid theoretical understanding of chocolate rheology—the science behind how chocolate flows and behaves—designed for R&D, QA, and production professionals, as well as anyone interested in the underlying science of chocolate.
-
Understand Chocolate Rheology
Grasp what rheology means in the context of chocolate and how fundamental flow principles translate into real chocolate behavior.
-
Measure & Compare Chocolate Flow
Learn how chocolate flow is measured and quantified, and why different recipes show distinct rheological and viscoelastic behaviors.
-
The video lessons are accompanied by a 27-page workbook featuring theory summaries, key takeaways, practical examples, and visual graphs that bring chocolate rheology to life. Use it as a handy reference to understand chocolate flow, viscosity, yield value, and their impact on manufacturing applications. See the workbook preview above.

What will I be able to make after completing this course?
After completing this course, you won’t be focused on making specific chocolate products—you’ll gain a deep, scientific understanding of how chocolate behaves. You’ll be able to interpret and explain chocolate flow properties, understand why different chocolate recipes behave differently, and confidently discuss rheology using accurate technical language.
You’ll learn how chocolate flow is measured and quantified, how composition affects consistency and performance, and how this knowledge supports better decision‑making in product development, quality control, process optimization, and application selection. By the end, you’ll be equipped to analyze chocolate behavior critically and apply theoretical insights to real‑world chocolate challenges with greater precision and confidence.
-
Do I need special equipment or ingredients?
