Callebaut Cookie Sandwich

This Callebaut 823 milk chocolate cookie is topped with an indulgent Callebaut 811 dark chocolate ganache and finished with a simple, stylish chocolate deocration that is easily customisable. An elevated version version of the cookie sandwich!

Brown Butter Sable

Preparation: Brown Butter Sable

Cream butter, icing sugar and nut paste together

  • 20 g
    eggs
  • 1 Quantity
    Prova Vanilla Pod

Add eggs and vanilla

  • 300 g
    plain flour
  • 20 g
    Callebaut Cocoa Powder
  • 20 g
    ground almonds

Preparation: Brown Butter Sable

Sieve flour and cocoa powder

Fold in the flour, cocoa powder and ground almonds

Place in the fridge to cool
Roll out between 2 silplat mats to 4.5mm and then cut to size
Cook at 160c for 8 minutes

811 Dark Chocolate Ganache

Ingredients: 811 Dark Chocolate Ganache

  • 160 g
    whipping cream
  • 40 g
    glucose

Preparation: 811 Dark Chocolate Ganache

Heat the cream and glucose to the boil

Cool to 80c then pour over chocolate and mix
Cool to 30-35c then use
