Cinnamon spiced apple cake with white chocolate and Gold ganache

Apple cake

Ingredients: Apple cake

  • 3.5 oz
    Soft dark brown sugar
  • 3.5 oz
    Whole wheat flour
  • 0.4 oz
    Baking powder
  • 0.1 oz
    Cinnamon powder
  • 0.5 oz
    Raisins

Preparation: Apple cake

Put in a bowl.

  • 7.1 oz
    Granny smith apple(s)
  • 0.1 oz
    Eggs
  • 3.9 oz
    Vegetable oil
  • 2.5 oz
    White chocolate chips
  • 0.5 oz
    Raisins

Preparation: Apple cake

Add in. Mix well then put into a 1kg loaf tin lined with a collar

Bake in a preheated oven at 180c for approximately 35-40 minutes. When it’s cooked it will be springy to touch and if tested with a knife will not be sticky.

Gold ganache

Ingredients: Gold ganache

Preparation: Gold ganache

Melt

Ingredients: Gold ganache

  • 2.6 oz
    Double cream (48%)

Preparation: Gold ganache

Warm

 

Mix together and whisk lightly until smooth

Ingredients: Gold ganache

  • White chocolate chips

Preparation: Gold ganache

Leave to cool before spreading onto the apple cake. Sprinkle with white chocolate chips and leave to set before cutting
