Cinnamon Stick Snack

Most used spice. Create a cinnamon shape made with milk chocolate, rolled in with cinnamon ganache. A cool bite to combine with a good coffee.

Cinnamon Ganache

Ingredients: Cinnamon Ganache

Preparation: Cinnamon Ganache

  1. Boil the cream, sugars ,vanilla and clove together.
  2. Strain and poor on the Lactée Superieure chocolate and mix well.
  3. Add the cinnanmon powder and mix well.
  4. Crystallize at 32C.
  5. Poor crystalized Alunga milk chocolate on the marble table and spread until thin layer
  6. Spread the cinnamon ganache on top.
  7. Roll directly on the marble using a scraper (same as making chocolate cigarets)
  8. Spray a mix of 50% dark chocolate and 50% of cocoa butter and cover with some Plein Arome cocoa powder using a brush.
