We are thrilled to have Russ joining us from our Chocolate Academy in Montreal to share his confectionery knowledge and expertise!

Russ specialises in modern confectionary based on traditional techniques and is most fascinated by the technical accuracy and attention to detail in confectionery which he will explore in his 2 day course.

Calendario de cursos

The course will cover:

  • Confectionery items including snacking bars, pate de fruit, nougat and caramels
  • Seasonal figures (demonstration)

Russ will focus on flavours, modern designs and seasonal figures that would be a great addition to your shop counter or window. 

With this course you will gain the confidence to make modern confectionery items your customers will love and understand the skill and process behind creating your own seasonal figures.
