Preparation: Haunted Rocks
For Cashews
- Roast the cashew nut until golden and place in the panning machine.
- Progressively add tempered Callebaut 811 into panning machine
- Add in colored cocoa butter.
- Shine dragées in the panning machine.
For Raisins
- Place raisin in the panning machine
- Progressively add tempered dark chocolate into panning machine
- Add Cacao Barry Noir Intense cocoa powder
