Preparation: Haunted Rocks

For Cashews

  1. Roast the cashew nut until golden and place in the panning machine.
  2. Progressively add tempered Callebaut 811 into panning machine
  3. Add in colored cocoa butter.
  4. Shine dragées in the panning machine.

For Raisins

  1. Place raisin in the panning machine
  2. Progressively add tempered dark chocolate into panning machine
  3. Add Cacao Barry Noir Intense cocoa powder
