    vegan butter
  • 180 g
    Sifted Icing Sugar
  • 460 g
    cake flour
  • 20 g
    corn starch
  • 80 g
    water

Preparation: Chocolate tart shell (sable dairy free)

  1. Combine the butter with the sifted icing sugar. Mix using a tabletop mixer with a paddle attachment.
  2. Roll out the dough to a 3mm thickness and shape as desired.
  3. Allow the dough to rest for 2 hours.
  4. Bake at 165°C for 10 minutes.

    glucose
  • 125 g
    water
  • 3,5 g
    Flake salt
  • 25 g
    vegan butter

Preparation: NXT M_LK CHOCOLATE SALTED CARAMEL

  1. Bring the mixture to 185°C and cook it into a caramel.
  2. Heat the water to glaze the caramel. Bring everything to 105°C.
  3. Add the chocolate, butter, and salt, and emulsify to make a ganache.
  4. Place the ganache in a tart case and let it set.
  5. Decorate with shavings and cocoa powder.
