Chocolate Fudge Cake Base

Ruby Ganache

Ingredients: Ruby Ganache

Preparation: Ruby Ganache

  • Heat the puree to a full boil
  • Add over chocolate and blend till combined
  • Set and pipe
  • Garnish with fresh berries

Cheesecake Filling

Ingredients: Cheesecake Filling

  • 900 g
    Medium Fat Cream Cheese
  • 200 g
    sugar
  • 240 g
    cream

Preparation: Cheesecake Filling

  • Cream the creamcheese & Sugar in a mixer until smooth
  • Melt chocolate & add to creamcheese mixture slowly & gradually until combined
  • Separataly Whip up the Cream until soft peaks and fold into Chocolate cream cheese base
  • In a springform pan place chocolate sponge and pour ontop cheesecake mix
  • Set in frigde and once firm set ruby ganache layer ontop
  • Serve
