Get ready for a sweet tour through Chicago’s diverse neighborhoods with Second City Sweets: Modern Confections inspired by the Windy City.

Join native Chicagoan Chef Alissa Wallers and honorary Chicagoan Chef Paul Yochum as they lead you through a series of creative, neighborhood-themed confections. Each recipe is inspired by the distinct flavors, history, and character of different Chicago neighborhoods, all connected through the famous CTA train lines. This hands-on culinary adventure will take you on a delectable journey through the city’s rich and varied confectionery culture with building upon the fundamentals covered in our Discovering Chocolate course.

Over three days you will learn advanced level chocolate and confection skills such as multi-layered bonbon fillings, creative framed ganache, panning, and creative enrobing techniques.

*Portions or all of this class may be taught as a demo and/or interactive demo.
