Preparation: Skeleton Coffins
- Fill the skeleton mold with tempered Callebaut W2.
- Temper the Saint-Domingue and mix in the salted caramel crispearls.
- Fill dark chocolate and salted caramel crispearls mixture into the coffin mold.
- Put molded skeleton-shaped white chocolate on top of the dark chocolate and salted caramel crispearls mixture before it is completely set.
- Allow to crystallize before unmolding.
