Originally from France, Nicolas Dutertre discovered early on the discipline and beauty of the pastry profession. His curiosity and passion for challenge led him to join the prestigious Compagnons du Devoir, where he learned that excellence is built on precision and the transmission of knowledge.
Driven by a desire to push boundaries, he honed his craft alongside Meilleurs Ouvriers de France before joining the prestigious world of Plaza Athénée in Paris, working with World Champion Christophe Michalak. For five years, he collaborated with exceptional talents and developed a style that is bold and creative, yet always rooted in the fundamentals.
Seeking new inspiration, Nicolas chose Montreal to continue his culinary journey, dedicating himself to mastering the art of the macaron.
Since 2014, he has been part of the Chocolate Academy™ Montreal, where he combines creativity and education to inspire professionals and students. Appointed Technical Director in October 2021, he now leads a passionate team with a clear mission: to inspire, educate, and innovate.
