Maple Caramel

  • 300 g
    Soya milk
  • 270 g
    Granulated sugar
  • 75 g
    Glucose
  • 105 g
    Maple syrup
  • 30 g
    Coconut butter
  • 6 g
    Salt

Preparation: Maple Caramel

 Heat the cream and vanilla together
Make a dry caramel using the granulated sugar
 
Add the glucose, maple syrup and warmed soya cream bit by bit
 
Cook to 106c and add the salt

Crunchy Pecan Base

Ingredients: Crunchy Pecan Base

  • 100 g
    Pecan nuts
  • 15 g
    Coconut oil
  • 75 g
    Oat flour
  • 25 g
    Cocoa powder
  • 60 g
    Coconut
  • 100 g
    Maple syrup

Preparation: Crunchy Pecan Base

Finely chop the pecan nuts
Melt the coconut oil
Add the rest of the ingredients
Roll between two sheets of greaseproof
Freeze and then cut out discs
