    Butter
  • 426 g
    Light brown sugar
  • 5 g
    Salt
  • 150 g
    Whole eggs
  • 5 g
    Vanilla
  • 5 g
    Baking powder
  • 180 g
    All purpose flour
  • 20-25% g
    Marshmallows chunks

Preparation: Blondie Layers

  1. Melt the butter, brown sugar and salt in the microwave.
  2. Beat in the cold eggs, one at a time, mixing until each egg is absorbed before adding the vanilla
  3. Combine the flour and baking powder; add it to the mixture.
  4. Stir until the batter is smooth. Fold in cream cheese chunks. Set aside

Brownie Layer

Ingredients: Brownie Layer

  • 106 g
    Butter
  • 57 g
    Cocoa powder (radnor)
  • 211 g
    Granulated sugar
  • 89 g
    Eggs
  • 3 g
    Vanilla
  • 69 g
    All purpose flour
  • 2 g
    Baking powder
  • 1 g
    Sea salt

Preparation: Brownie Layer

  1. Melt the butter in the microwave.
  2. In a medium bowl, mix the cocoa and butter until combined.  Add the sugar and
  3. incorporate.
  4. Mix in the eggs and vanilla until combined.
  5. Add the flour, salt and baking powder and mix until just combined. Gently mix in
  6. inclusions; Do not overmix.
  7. Set aside

Assembly

  1. Layer 550 grams of blondie on a half sheet tray. Flatten and even out.
  2. On top, layer 1000g of brownie and level out. 
  3. Finish off with 550 g of blondie on top
  4. Bake at 350 F for 30-35 min
