    35% cream
  • 130 g
    Glucose syrup
  • 50 g
    Orange zest
  • 20 g
    Cardamom
  • 3 g
    Salt
  • 113 g
    Unsalted butter

Preparation: CARDAMOM ORANGE CHOCOLATE GANACHE

  1. Heat the cream and glucose syrup together until the glucose syrup melts.
  2. Add the cardamom, salt, and orange zest and let infuse for 15 min.
  3. Melt the chocolate and butter, and combine well.
  4. Add the infused cream to the melted chocolate and emulsify.
