Preparation: Passion Fruit Caramel Ganache
- Bring the pulp to the boil Set aside
- Make Dry Caramel with Sugar
- De-glaze with Fruit Pulp
- Pour caramel mix over chocolate and emulsify
- Cool to 29°C and pipe
