18 gEgg yolks

2 gBicarbonate of soda

Preparation: Chocolate Chip Cookies
- Melt butter, but do not heat completely.
- Add the eggs, yolks and both sugars
- Add the remaining dry ingredients.
- Dough must rest for 30 minutes before it gets rolled & baked
- Bake at 160°C for 8mins.

Preparation: 823 Milk Chocolate Mousse
- Heat the milk adding the hydrated gelatin ,then add the couverture – allow to cool
- Then fold in the whipped cream
- Set in mould
- Freeze
- Sandwich with Cookies
