Preparation: Cookie dough

  1. Cream the brown sugar and butter butter (room temperature) in the bowl of a stand mixer.
  2. Add the eggs at room temperature.
  3. Add the sifted flour, baking soda, and salt to the mixture. Mix until a smooth dough forms.
  4. Add the three chocolate wafers.
  5. Scale the cookies to 200 g.
  6. Bake for 12-14 minutes at 175 °C. Baking time may vary by oven.
  7. At the end of baking, top with crushed three-chocolate wafers for decoration.
