90 gunsalted butter

65 mlwater

150 gcaster sugar

15 mlVegetable oil

45 mlbutter milk

50 gself-raising flour

70 gplain flour

1 gbicarbonate of soda

20 gbeetroot powder

2 piece(s)lime zest
Preparation: Ruby Sponge
Warm with the water until completely melted
Add the chocolate and mix until melted
Add the sugar, oil and buttermilk and mix until incorporated
Seive the two flours, bicarbonate of soda and beetroot powder into the mix
Add in the zest, place into a lined baking tin and cook at 150c for 20-25min
Ruby Ganache
Ingredients: Ruby Ganache

225 gwhipping cream

15 ginvert sugar

20 gunsalted butter
Preparation: Ruby Ganache
Heat the cream and invert sugar to 40c
Melt the Ruby RB1 to 32c and with ahand blender mix with the cream
Add in the butter and blend

Temper the RB1 chocolate and add the oil
