Apple Fruit Paste

Ingredients: Apple Fruit Paste

    apple juice
  • 1.0 oz
    lemon puree

Preparation: Apple Fruit Paste

Heat apple juice and puree to 40c

    Sugar #1
  • 3.1 oz
    glucose syrup

Preparation: Apple Fruit Paste

Mix sugar #1 with glucose syrup. Add to juice-puree mixture and heat to 60c

    Sugar #2
  • 0.2 oz
    yellow pectin

Preparation: Apple Fruit Paste

Mix sugar #2 with pectin and add bit by bit while bring to the boil. Heat to 106c

Ingredients: Apple Fruit Paste

  • 0.2 oz
    Citric acid

Preparation: Apple Fruit Paste

Add citric acid solution and mix well

Immediately pour into a frame at 28 x 38 x 1 high. Leave to set

Apple Ganache

Ingredients: Apple Ganache

  • 4.6 oz
    Apple juice
  • 0.5 oz
    glucose syrup DE 60
  • 0.6 oz
    dextrose
  • 0.5 oz
    sorbitol powder

Preparation: Apple Ganache

Mix apple juice and sugars and heat to 40c

Ingredients: Apple Ganache

  • 1.7 oz
    cocoa butter
  • 7.6 oz
    CHK‐R30GOLD‐E0

Preparation: Apple Ganache

Melt chocolates and cocoa butter at 35c

Pour onto juice-sugar mixture and emulsify

Ingredients: Apple Ganache

  • 1.7 oz
    butter

Preparation: Apple Ganache

Add butter (room temp) while continuing to emulsify

Pour ganache onto the framed fruit paste and even out. Allow to set

Crumble

Ingredients: Crumble

  • 3.5 oz
    butter
  • 1.8 oz
    brown butter
  • 1.8 oz
    brown sugar
  • 3.5 oz
    sugar
  • 2.8 oz
    almond flour
  • 2.5 oz
    flour
  • 0.1 oz
    sea salt

Preparation: Crumble

Mix butters, sugars, flours and salt until smooth
Roll out to 4mm.
Bake for 25 minutes at 150c
Leave to cool and crush

Shell 10g
Apple fruit paste (filled a little more than half way) 15g
Apple Ganache (filled to a little under the top) 8g
Streusel 10g
