Chocolate Souffle

Ingredients: Chocolate Souffle

  • 125 g
    Cream
  • 250 g
    Vhp signature dark chocolate
  • 20 g
    Cocoa powder
  • 2 g
    Egg yolks
  • 15 g
    Cornstarch
  • 6 g
    Egg whites
  • 80 g
    Castor sugar

Preparation: Chocolate Souffle

Method

1 Bring to the boil the cream adding the chocolate off the heat, - mix well

2 Add the cocoa powder – mix until smooth

3 Whisk in the yolks & the corn flour- return to the heat and cook out for 1 min

4 Form a soft meringue with the whites & sugar

5 Transfer the chocolate mix to a mixing bowl and temper 1/3 rd of the meringue into the mix then fold in the rest

6 Pour into greased ramekins level of & thumb swipe

7 Bake at 200 c until risen
