Preparation: Chocolate sablé Breton
- Mix the soft butter with the melted cocoa mass at 35 C
- Place it in the mixer with the paddle attachment and add the icing sugar
- Sift together flour + salt + baking powder and add into the mixer
- When the texture becomes sandy add the egg yolks
- Avoid over-mixing
- Finish manually and wrap tightly with plastic wrap.
