With almost 300 different flavours and 400 separate aromas of the cocoa bean, balance is everything. Our master blenders are dedicated to getting the best out of every bean. Because like coffee, as with chocolate, the bean is king. Just as the variety and quality of the beans, the soil, climate fermentation and the experience and the knowledge of the roaster are crucial to the coffee, it is precisely so with chocolate. The variety of the occoa bean, where it is grown, the soil, climate, fermentation, drying, roasting and recipe will all affect tastes and flavours.
