- Warm up the purée, yuzu juice, cream, inverted sugar, dextrose and butter at 70°C

- Pour over the chocolate and the Power FlowerTM.
- Wait for 2 minutes and emulsify.
- Pour into a frame when the ganache is at 27°C.
- Let crystallise for 12 hours minimum at 16°C before enrobing.
