2.2 lbDried Cranberries
Preparation: Dark Cranberry Jewels
Melt Callebaut 811 Dark Chocolate to 45 ̊C.
Then place the cranberries into a panning machine.
Set the speed to 30% and air temp to 12°C. Slowly add the melted chocolate to cranberries, allowing to dry between applications.
Finish with Capol Glazing agent products to give a high shine.
Pack dragées and place into the box.
