These are a complete hybrid between a cookie and a mince pie. Indulgent and delicious, they are for life not just for Christmas!

2.1 ozbutter

1.8 ozcaster sugar

5.3 ozbrown sugar

1.8 ozEgg

8.8 ozplain flour

0.1 ozbaking powder

0.1 ozsalt
Priprema: Cookie Dough
Beat the butter and sugars together
Add the flour, baking powder and salt
Add the egg and just before the dough comes together add the chocolate chunks
Beat to a smooth dough
Take 65g balls, roll and then flatten
Add the filling and shape the dough around
Place into a 7cm muffin tin
Bake at 180c for 14-16 minutes
