1. Heat the fruit puree at 45°C.
2. Mix sugar with pectin and add to the warm fruit puree.

3. Bring it to 104°C.

Coconut and Rum Ganache

Ingredients: Coconut and Rum Ganache

Preparation: Coconut and Rum Ganache

1. Heat the fruit puree at 85°C
2. Pour over the chocolate and mix well using a
hand blender.
3. Add the rum and finish the emulsion.
4. Incorporate to desiccated coconut.
