Caramel Nxt ganache

Ingredients

  • 8.5 oz
    Almond milk
  • 1.8 oz
    Sugar
  • 1.1 oz
    Glucose
  • 14.1 oz
    CHM‐Q42‐DFR

Preparation

  1. Make a dry caramel with sugar and glucose.
  2. Add almond milk and heat at 85°C.
  3. Pour over the chocolate and mix well using a hand blender.
