  1. Cook the sugar and water to 115 Celsius.
  2. Add the nibs and mix well until you get a sandy texture.
  3. Add the Fleur de sel and reserve. 
  4. Temper the chocolate.
  5. Add the cocoa nibs directly into the molds then pour on top the chocolate and let crystalize.
