Tamamiyle Chocolate Academy için özel olarak hazırlanmış olan bu özel reçeteler ile dolu olan ve ödüllü şef Johan Martin tarafından verilecek workshopta, mutfağınızdaki pastalara profesyonel dokunuşlar yapacaksınız.  Bu benzersiz workshop, lezzet dolu pastalarda profesyonel seviyeye ulaşmak isteyenler için düzenlenmiştir.

Johan Martin Kimdir? 

 Nancy doğumlu olan Johan, kariyerine Paris’te Maison Debieux'da başlamış, daha sonra Stéphane Glacier’e danışmanlık yapmıştır.  2006’da Phoenix’deki Dünya Pastacılık Kupası’nda birinci olan Fransız takımının MOF pasta şefi Franck Michel, MOF Franck Kestener, MOF şef Bruno Montcoudiol’e asistanlık yapmıştır. 2012'de ilk kitabı olan Top Dessert kitabını yayınlamıştır.

2009’dan beri Bellouet Conseil Paris Pastacılık Okulu'nda, okulun kurucusu olan Jean Michel PERRUCHON ile  profesyonellere yönelik eğitimler vermektedir. Aynı zamanda Japonya, Avrupa ülkeleri, Kuveyt, İsrail, Singapur, Kolombiya, Rusya, Avustralya ve Amerika gibi birçok ülkeyi ziyaret ederek tecrübelerini paylaşmaktadır. 2007'de Lyon’da düzenlenen Artistik Şeker Heykeli Yarışması’nda birinci olmuştur. Şeker dekoru ve yaş pasta kategorilerinde 2013'de Lyon'da düzenlenen Dünya Kupası Yarışması'nda Fransız Takımı ile birlikte gümüş madalya kazanmıştır.

Who is Johan Martin? 

As the « Future Talent for the French Pastry », Chef Christophe Michalak has admired Johan Martin’s  remarkable works - he is originally from Nancy – Lorraine region in France and has started his carrier in Paris region at Maison Debieux, later he has worked alongside Chef Stéphane Glacier, MOF Patissier as a pastry consultant. In 2006, at the pastry world cup in Phoenix, he served as an assistant for the French team, Chef Franck Michel, MOF Patissier, Chef Franck Kestener MOF Chocolatier, Chef Bruno Montcoudiol MOF Patissier, who won this championship.  In 2012, his first pastry book, “Top Dessert” will be published for general public fascinated by pastry.

Since 2009, he provides all ranges of French pastry courses for professionals at  Bellouet Conseil School in Paris owned and leader by Chef Jean Michel PERRUCHON, MOF Patissier, he shares his experiences and “savoir- faire” while traveling throughout France also all over the world, such as European counties, Japan, Kuwait, Israel, Singapore, Colombia, Russia, Australia and USA etc.  He was the vice champion of Artistic Sugar Competition in Lyon in 2007 and won the silver medal during the selection French team, Sugar show piece and Entremets category going to the pastry world cup in Lyon in 2013.

We are organizing practical and theoretical courses for chocolatier, pastry chef, candy craftsmen, bakers and caterers. The curriculum includes beginner, advanced and specialized courses on chocolate processing and a range of techniques and applications - from molding, enrobing and sculpting to decorations and flavorings.

In addition to our Technical Advisors, the members of our Ambassador Club Chefs are also been in the CHOCOLATE ACADEMY™ center. This Club has more than 70 world renown Ambassadors. These Ambassadors help us test and develop new products and recipes, additionally they help us for our costumer trainings.

To provide good communicate with all our people who wants to learn everything about chocolate, the number of participant is limited 8-12. We recommend you that register early. We look forward to sharing our passion for chocolate with you!
