Workshop 1 - Foundation Chocolate Course - 2 days
Introduction: Have you ever thought about becoming a chocolatier and opening a chocolate shop or making chocolates for local wholesale, then this foundation course could be your first step towards that journey!
Who should attend: Anyone who is thinking
of becoming a chocolatier, or would like to learn the basic skills
of working with chocolate.
What the course will cover: This is an informative theoretical and practical course for beginners. During the course there will be a theory session where we will look at the chocolate making process from cocoa bean to bar, as well as the science of tempering chocolate. The following methods will be covered: pre-crystallising with Callebaut callets and Mycryo cocoa butter using a chocolate melter, microwave and semi industrial machines.
The course will also touch on the science of making ganache fillings as well learning a wide range of basic chocolate making skills and techniques:-
- - Moulded chocolates with ganache fillings
- - A moulded novelty figure
- - Chocolate lollipops
- - Chocolate truffles
- - Cut ganache centres which you will hand dip
- - Use of transfer and texture sheets
- - The theory will include; ideal working and storage environments, how to handle chocolates, troubleshooting awareness and shelf-life considerations.
- - You will also receive a full list of UK supplier contacts to assist you in planning a small chocolate business.
By the end of the course you will have the basic skills and techniques to work confidently with chocolate.
You have no experience in the art of chocolate but are motivated to be immersed in this wonderful world.
The UK CHOCOLATE ACADEMY™ center is based in Banbury, Oxfordshire and is a ‘State of the Art’ purpose-built training environment with eight individual work stations, allowing for one-to-one, hands-on tuition. The Academy is situated adjacent to the factory allowing easy access for tours of the Barry Callebaut plant.
Our courses have been designed to offer practical and theoretical help for the novice chocolatier through to the chocolate artisan, pastry chef, confectioner, baker, caterer and lecturer.
