Recipe n° C824 is the milk chocolate with the most pronounced cocoa flavours, less sweet, and rounded of with an abundance of creaminess and milk. Its typical biscuit taste makes it a great chocolate to indulge in as such, or to pair it with warm spicy ingredients such as cinnamon or sweet and juicy fruit varieties such as pear or strawberry. 
It is less fluid and therefore has the right texture to create smooth ganaches with a thicker, creamier texture. The C824 also allows moulding of bigger hollow figures with a thicker shell: hollow figures of about 25-35 cm can be moulded in 1 go. It's also a great chocolate for homemade decorations: when tempered, the less fluid texture keeps the chocolate from becoming runny too easily.
