The iconic 811 rich in cocoa butter for panning, spraying and very thin enrobing.
Recipe n° 7811 is the high fluidity recipe of the 811. It contains about 7% more cocoa butter and is perfectly suited for applications in which you want to create a thin, cracking and shiny chocolate layer. When used for very fine enrobing, moulding a thin chocolate shell or pan-spraying, the 7811 will give you excellent end results.
And its taste? The 7811 has an intense cocoa body smoothened by its perfectly balanced sweetness and a touch of vanilla to round off the taste. The extra cocoa butter creates a hard crack and a beautiful gloss, enhancing the taste experience.
