Recipe n° W8 is a one-of-a-kind white chocolate in which milk, cream, caramel and vanilla go together in perfect harmony. This chocolate is fine, subtle and smooth. It seduces and indulges without overwhelming. It's wonderful to savour as such, producing a creamy mouthfeel without feeling heavy, and a great to base to flavour patisserie crèmes, mousses, ice creams, sauces and drinks.
In pairings, our chefs recommend ingredients with a moderate acidity such as mango. Adding a touch of a powerful ingredient such as fleur de sel or truffle also works wonders.
With its medium viscosity, recipe n° W8 can be used in many applications: moulding pralines and hollow figures, enrobing, ganaches, and flavouring mousses, crèmes and ice creams.
