With ruby you’ll surprise your customers the whole year through. This recipe pairs ruby chocolate with matcha tea and pistachio – a match made in heaven! And a showstopper in your shop counter.

Ruby Tablet with Matcha Tea

  • 92g
    pistachios and matcha tea powder

Place into mould.

Temper and fill the mould with the ruby chocolate. Even the surface and clean the sides of the mould. Sprinkle matcha powder and pistachio pieces onto the wet chocolate. Leave to crystallise at 16°C for at least 2 hours before unmoulding.
