Recipe n° F805 is based on Callebaut®'s classic 805 recipe, yet is less fluid. With its cocoa content of around 50%, this chocolate brings you a mild taste, still with plenty of roasted cocoa and a hint of natural vanilla.
Compared to the 805, the F805 contains about 6% less cocoa butter, which creates a less fluid texture. That makes it ideal for moulding bigger confectionery items in one go, such as bigger hollow figures. 
Its lower cocoa butter content makes the F805 also the ideal base to create ganaches for enrobing with a very lovely bite and a smooth texture that melts in the mouth. It's also perfect for the flavouring of chocolate spreads, fudges and caramels whilst maintaining a smooth texture.
In ganaches, the F805 pairs extremely well with strong fruit flavours such as orange, banana, and with red, acidic fruits and berries. Also great with powerful beers.
