Recipe n° 805 is one of the oldest dark chocolate recipes created by Octaaf Callebaut. With 50% cocoa, it has a remarkably mild chocolate taste, still with plenty of roasted cocoa flavours and with pronounced vanilla notes to round it off.
The 805 is the ideal chocolate when you're looking for a mild, balanced and not too dominant chocolate taste. It pairs extremely well with strong fruit flavours such as orange and banana, as well as with red, acidic fruits and berries. It's also great with powerful beers.
This chocolate has a standard fluidity, making it an all-round chocolate for a wide variety of applications: from moulding over enrobing to flavouring ganaches, pastries and desserts.
